Chewy Oatmeal Cranberry Walnut Cookies

Ingredients

  • 1 teaspoon baking soda
  • 1 cup butter
  • 1 cup dried cranberries
  • 2 eggs
  • 2 cups flour
  • 2 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey
  • 2 1/2 cups oats
  • 3 tablespoons salt
  • 1 cup packed brown sugar Splenda
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped walnuts

Instructions

  • Preheat the oven to 350 F.
  • In a medium bowl, mix the flour, baking soda, salt and cinnamon; stir in the oats, and set aside.
  • With an electric mixer, beat the butter and both sugars until light and fluffy. Beat in the eggs, one at a time, then scrape the sides of the bowl.
  • Add the honey and vanilla and beat until blended. Add the flour mixture in two additions, beating until well combined.
  • Stir in the cranberries and walnuts.
  • Drop the dough by heaped teaspoons about 1 inch apart onto cookie sheets.
  • Bake for 9-11 minutes or until the centers of the cookies are soft and no longer look wet.
  • Let cool on the sheets for 5 minutes, then transfer to a rack to cool completely.
