Baked Chicken Caprese

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 teaspoons garlic powder
  • 1 teaspoon pepper
  • 8 ounces fresh mozzarella
  • 15 large basil leaves, rinsed & dried
  • 1 23-ounce jar pasta sauce
  • 16 oz whole wheat pasta
  • 1/2 tsp salt, or to taste
  • 12 ounces broccolini

Instructions

  • Preheat the oven to 450°F. Line a baking sheet with parchment paper for the broccolini.
  • Pat the chicken breasts dry and trim any excess fat. Season both sides of each breast with garlic powder, pepper, and 1/2 teaspoon salt.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear the chicken for 3–4 minutes per side, until golden brown. Transfer the chicken to a greased 9x13-inch baking dish.
  • While searing the chicken, toss the broccolini with 1 tablespoon olive oil, a pinch of salt, and pepper. Spread it evenly on the prepared baking sheet. Roast in the oven at 450°F for 15 minutes, alongside the chicken.
  • Place the chicken in the oven and bake on the middle rack for 15 minutes at 450°F alongside the broccolini.
  • While the chicken and broccolini are roasting, cook the whole wheat pasta according to package instructions. Drain and set aside.
  • Remove the chicken from the oven and reduce the temperature to 350°F. Top each chicken breast with pasta sauce, 2–3 basil leaves, and a slice of fresh mozzarella. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and the chicken reaches an internal temperature of 165°F.
  • Serve the chicken over the cooked pasta with a spoonful of extra sauce. Plate the roasted broccolini alongside the chicken and pasta. Garnish with the remaining basil leaves, if desired.
